Likely because it’s been over a year and a half hanging in a high air circulation commercial walk in cooler that stores lots of vegetables.
It’s mainly that white outer growth normally seen. I wasn’t so much concerned with the presences as the permiability of it thru the drybag. Was curious if in a sealed casing any growth would get it, or would it just be contained to the outside. Thanks for the info, I’ll be enjoying this seriously aged duck-fig-bourbon treat this weekend. Flavour should be popping! I’ll try and get a picture.
