Any traditionally made Capicola is exposed to air and it’s a good thing. UMAi Dry® is not a vacuum bag and does not prevent the meat to be exposed to oxygen. It’s a membrane that protects the meat from rapid drying, odors and other contaminants. So, as long as your Capicola looks good, smells good and only has a dusting of white mold which isn’t harmful, you are probably in good shape to continue drying it and will come away with some good results.
