Welcome aboard, brianhclo. Your 27% weight lost in 21 days sounds highly unusual. Either that meat was dripping wet or your refrigerator is possibly on the blink. Have you noticed any vegetables drying out? The highest weight loss I have ever experienced was 25.4% but that was for 60 days.
As for vacuuming your finished steaks then as long as you are using Food Saver bags they will last for some time. I have some dry aged steaks left that are 2 years old and are not freezer burnt. Ron
