You were correct….I am alive. 🙂 ON another note, the texture was a bit flaccid, so I ran in my dehydrator for a while. It made things a little salty, but nothing that was unpleasant. Thanks for the input.
I’m awaiting my Bresaola to reach the desired weight loss recommended by Umai and then I’ll slice it open.
I also have a whole beef tenderloin that I’m going to start in the next couple of days.
