Yup, pork loin. The pork shoulder I was seeing didn’t have the right shape to fit into butcher netting. Next year, I’ll try a pork shoulder, and stuff it into a nylon netting I’ve been saving from big Turkeys.
This was wrapped in cheese cloth before slipping into the netting. I took some liberties in my investigation in how to do this, and I’m please with the results. 🙂
