With charcuterie, after about a month, the meat will almost always shrink away from the bag. UMAi Dry® is not a vacuum bag. You use the vacuum sealer only to draw the UMAi Dry® into best contact with the moist protein coating on the meat. It will bond like a membrane. but once that meat dries and shrinks, it will pull right away. Expect it. UMAi Dry® is still providing the protected environment.
