Yes, you can definitely cold smoke before you dry. The bag is probably not going to adhere to the meat the same as if the meat was still wet, but it should not be a problem. Just make sure that you don’t get the surface too dry during smoking (forming a pellicle) otherwise it will not dry evenly. You can also try to re-wet the meat before you put it into UMAi Dry.
