You have actually explained why neither beer refrigerators nor those tiny ones called “dormitory” ones are good for dry aging. Unlike conventional kitchen refrigerators they do not draw off the moisture released. People try to take steps to circumvent the problem, but it is hard to achieve. That is why placing the UMAi bagged meat in the kitchen refrigerator is best. If it is a matter that SWMBO objects then do what I did to start my first attempt. I placed it on a wire rack on the bottom shelf and pushed it to the back. Then I even placed jars of pickles, mustard etc in front of it so out of sight – out of mind! Once my wife tasted the results of my drying efforts she was hooked and after that she was fine with it! Ron
