Hi Pam! For a first timer you sure have jumped in with both feet! LOL Good for you! I have reviewed your pictures and the concern I have is the meat is too crowded. Therefore where they are touching then those surfaces are not being able to release their moisture since they are so crowded. Is there any chance you can move one of the three up to the nest shelf? Ron
