Sorry for letting your question go unanswered so long! Me bad!
The bag material is the same so yes you could use a charcuterie bag for the small ribeye. Just to save others the time of researching the bags sold specifically for charcuterie are in two sizes: 8 x 18 and 10 x 11. For dry aging larger pieces the sizes are 12 x 24 and 16 x 28.
