just a follow up…Saturday night, Sunday morning, and yet again during the day on Monday my wife said to me “those steaks were WONDERFUL!” I too knew they were GREAT both in taste and tenderness! 45 days of aging is well worth the wait. BTW that new 16 pounder is already starting to “tan” in my refrig but has a long way to go…but I’m patient – especially when the effort creates memories like those of last Saturday night’s meal!
