I just got my kit. The Starter Culture is difficult to find and expensive. Can one use and get satisfactory results from using Wine Yeast. It consumes sugars and causes fermentation, so it would seem to me that is could act as a culture in meat processing also. Right?
No a yeast will not work. You need a bacterial culture . Specifically to form lactic acid, and many contain color fixing and flavor forming strains.
Various meat cultures are readily available online for a reasonable cost considering the amount of product that can be produced.
