Hi Mark, welcome to the forum.
You did absolutely the right thing. The “bark” needs to be trimmed, especially if you plan to store the steaks. As for the use of the bark, there are many different opinions and ideas. In fact there are a couple of threads on this forum related to this subject, here is one:
