I did a search here on “venison” and all I found was this thread on attempting using a corned beef recipe for venison. I wonder since venison has so little if any fat at all that aging it would just make it extremely strong tasting to anyone other than a real gut strong person with steel capped teeth to chew it! But – if you try aging some please post your results!
