I may be late to the party, but- Had a 16lb Ribeye dried for 62 days. The bottom had a soft spot of fat that emitted a smell. Not rancid, just different.
I removed all the fat in the bottom area of the rack and packaged as normal. We’ve eaten several and all is good! As a matter of fact, having one now……..
I think the issue is due to neglecting to rotate the rack during the aging period.
Just my opinion.
