Sorry to be the bearer of bad news, but no – you should not have double bagged it. The UMAi Dry bag does what it does by allowing the moisture to escape – that’s what dry aging is – losing the tasteless water in the cells. Double bagging it will greatly reduce the release plus POSSIBLY encourage bacteria to spoil your meat. At this point your best bet is to remove the new bag so as to remove the initial bag and then reseal the new bag. OR…how long had your first bag been on? Maybe you ought to call this meat done for now and go ahead and enjoy it, albeit not aged as long as you intended. Ron
