Bravo! You’re going to love that machine. All of their models are all Stainless Steel construction throughout. I believe one can even opt for a foot pedal on-off switch that they sell, and not an uncommon thing, such switches I think can be gotten from the big auction site for not much money.
I know a local Butcher here in the area who himself uses a LEM #8 like you are getting, and I seen it and told him I have the smaller model like it. I asked him how he likes his, and he says it’s great for his smaller grinding jobs like for making up a bunch of Beef-Steak Patties he said.
He added that his LEM takes him 15 minutes to clean, but his big one in the back takes an hour or more.
