Good news- success! I went to a smaller bag that just fit the meat and ran the heat sealing program 3X, 20 seconds apart without moving the bag. Got a decent vacuum using the VM, again using the 3X heat seal and then a backup 3X heat seal about 0.25″ above the original. There is good contact between the meat and drying bag all around the meat. Feeling better now. Thanks for your help!
