Sorry for your loss, but you have already admitted what you did wrong! It was not the fault of the UMAi Dry® bag. A modern frost free refrigerator works to draw off the moisture, but instead it just laid there and rotted.
You said, “the walls of the fridge and the bags themselves had a fair amount of condensation on them, which makes sense considering my fridge does not have humidity control, is this the issue that caused the meat to rot and fail to develop a crust?”
