A kegerator will only keep the meat cold and will not have the most important part in dry aging – unlike a properly operating frost free refrigerator it will not remove the moisture being released from the meat! Most likely your meat will develop mold and may even rot! My advice is to beg SWMBO to allow you to keep your meat in the kitchen refrigerator! Do what I did for my first one 8 years ago. I placed it at the back of the bottom on top of a wire rack to allow air to circulate and then I placed jars of whatever in front so the meat became out of her sight and thereby out of her mind!
Trust me – unless she hates wonderful tasting, tender steaks she will become a believer after this first one of yours!
