Welcome aboard! Like you some people feel the smell is similar to blue cheese, while others call it an earthy or nutty smell. You were fine!
BTW I’m not quite sure what sub-primal you call scotch. 25 days is a rather short time and you can easily do and benefit from a longer period such as 30 or 45 or some people like to go 60 days.
