Hello all. I just ordered my dry ageing kit and in preparation for the process, I wanted to ask you guys about temperature regulation and air circulation. I have a horizontal freezer for this and read about the freezer conversion thermostat. Any recommendations as to brands, models, where to buy, etc. Saw one on-lline but it has no readout so how do I set at the right temperature? As to air circulation, just a regular fan will do? With the cord on the rubber, isn’t the seal affected and the door will not close tight?

First off I’m not familiar with your term of your equipment being called a horizontal freezer. To my way of thinking a freezer FREEZES “stuff” and that is too cold to dry age meat. So rather than to address your other questions let’s start there. Now your turn! BTW I’m here in the USA and as I post it is 9:22 PM and I go to bed early like 10 PM so if you reply, please don’t think I’m avoiding you!

My friends who do home brewing have since been told that this unit will also work on a freezer.
It’s a pretty straight forward set up. There are two RANCO’s models available one for a few dollars less requires you wire in the cables yoursefl, or for a few dollars more you can get the RANCO with the plug and cable all wired up.
1) set the freezer to the coldest setting.
2) plug the freezer into the RANCO unit
3) Plug the RANCO into the wall outlet.
4) Run the RANCO temp probe into the freezer. You can run this between the frigde and doorNow just simpley set the temperature on the RANCO Unit that you want to have the freezer set at and what diferential you prefer (the margin of temperature flux you want before the Ranco turns the compressor on.) I have mine set for 36 degrees +- 2 degrees.
I wish I knew that a freezer would have worked before I bought my under the counter fridge, as freezers were significantly less $$ money than a quality fridge.

Since you are using the chest type i would suggest you raise the lid for a few minutes at least say every 3 or 4 days during the aging process to allow the air to exchange. This isn’t too scientific – just my thoughts on the matter!

I had raised that same question and the guy replied he has had them run as long as a year in his RV refrig.
