Welcome aboard! Yes you can BUT- my concern is like we have posted here numerous times which deals with where you purchased the meat, meaning was it sealed in a cryovac bag when you bought it and then froze it or was it just purchased unwrapped out of a butcher’s display case? Then there are also questions and concerns raised about how it has been handled.
Honestly – if any or most of the answers to my questions above lean toward problematic then if I were you I would wait and start with a newly purchased sub-primal still sealed in a cryovac bag.
