The only trouble with your chest type freezer is when you open the lid the cold air stays in and doesn’t circulate, whereas an upright unit like a refrigerator “dumps” the air when the door is open. Since you are using the chest type i would suggest you raise the lid for a few minutes at least say every 3 or 4 days during the aging process to allow the air to exchange. This isn’t too scientific – just my thoughts on the matter!
