Thanks for the info, I think my Fridge is running between 40-80% humidity as it cycles. I really think my biggest problem was I was trying to do 2 primals at the same time and I think it was just too much moisture for the little fridge to deal with. I’m going to do one at a time for the next few and see if thinks change.
My meat isn’t spoiling and it’s definitely tenderizing…I don’t think I’m getting the full dry-aged flavor, but it’s still better than an off-the-shelf steak. I’m going to keep trying and see if my assumptions of single vs multiple primals affects my final product. I got a rib-eye waiting to be butchered. Today is day 42!
