I live in Houston but I have a cow/calf operation in Colorado. All our cattle are grass fed. Occasionally, for one reason or another we butcher one of our cows instead of selling it. They are always very lean. Cows are normally sold at auction or under contract and they go to a feedlot where they fattened up on special blend of grain and corn. Once they are “fattened up” they are sold to the slaughter houses. Their fat gets developed at the feed lots, not in the grass fields.
