Tom, in the first place as I said before I HIGHLY doubt you ruined it! Then to know for sure let your nose and eyes answer that question. If it is spoiled it will smell rancid and drive you up,the wall. Please be aware though that aged meat takes on a earthy, nut like smell, but rancid spoiled meat will be obvious! Ron
