Hello and welcome , the drying will stop when you remove the drybag and vac it in food saver. I have found that you’re flavor will still mature while it is vacpacked and when I work on a coppa for sliceing I store it in parchment in a ziplock , mine have continued to dry more and the flavor gets even better, sometimes a few specks of white mold may appear it adds to the flavor ,it us still ok to eat,remember gray or green,mold are spoilage black mold is deadly.
