Terry, hands down go with the prime! The whole point is to be graded prime it will have more marbling which when aged makes the meat that much more tender and delicious! Choice is all I have access to where I live so I’m already jealous of you (kidding of course), and while aging greatly benefits choice why not start with a better piece? Besides – when you compare your aged steaks to those of fine steakhouses their aged beef is prime also. Go for the best and you’ll be glad you spent the the extra bucks! Ron
