Can’t get the seal to bond properly

Sorry that you are having an issue. As for the simplest solution which is just fine is to insert a straw or tubing in the end of the bag, grasp the end so it is tight around the straw and suck out the air, quickly pull out the straw and seal with a twisty. You can speed this method up by first pressing the bag against the meat to force out as much air as possible. Ron
