LEM makes some very nice models. I have the #5 Model which will cover smaller uses, but IMO is a very solid machine which can hold up to heavy use. If you’re butchering your own meat, a hunter, etc, then the #8 would be better suited for such.
As for Sausage Stuffing, most agree that buying a separate Crank Style Stuffer is best, doesn’t mutilate and further shred the meat grind.
