I’m surprised there were no responses to this. Both the forum moderator and direct emails from Umai have clearly intimated that there is no reliable way to measure PH. Is what I learned in high-school science lab all fake-news?
Would be curious to hear an expanded discussion on PH measurement.
I originally got into this to use traditional (non umai bag) methods via a home built dry-cure chamber with humidity & temperature control(and I still intend to). PH measurement would probably be part of that (AW if I could afford a testing device).
Anyway…mostly just curious about the “can’t reliably test ph” comments.
My 70mm Pepperoni is down to close to 65% original weight….one is a little ahead of the others and I may slice into next weekend.
