Normal rule of thumb is at least 21 days for a New York strip primal since it basically is a thinner chunk of meat than say a rib eye. OTOH I personally like to go at least 28 days yet my best to date was a 35 day aging.
For comparison a rib eye is at least 28, though I really liked 45 days and presently have one headed to 60 days.
