Welcome aboard, Matt! Glad you joined us! I’m not clear – did you buy this chunk of cow already frozen? If so you’ll just want to thaw it carefully in the refrigerator over a matter of a couple days at least and then quickly vacuum it down in a couple Drybags. 23 pounds exceeds the capacity of even the largest bag. As for freezing after it is aged that is no problem at all. Just age the meat, cut it into steaks or roasts and then freeze individually. Keep us posted on your progress!
