I see no reason it would be unsafe, however I do wonder if you will like the taste as it will be different than rendering unaged fat. I’m also basing my opinion since apparently you don’t care for the dark rind and fat of the outside or you wouldn’t be trimming it so heavily. OTOH it sounds like you’ve already started the rending so please let us now the outcome!
