i’m currently aging a ny strip as well…i was going to go for the standard 21 days, as i had the butcher remove the fat cap as the instructional video suggested.
so if we leave the fat cap on, we could age a ny strip for more than 3 weeks with good results? interesting.
i’ll definitely be checking in on this thread to see your results.
