As long as I go prime, those sirloins should be ok.. They are about as marbled as a good choice strip. Might be another 2 weeks, but the game plan is to buy 2 of them, one for 35 days and one for 42. I would like to think that at 35 days, it should be optimal, but we’ll see… either way, my wife thought it was the best steak yet.. and if she’s happy…………………………………..
