Welcome aboard, Julio! I’m just the forum moderator here, but I try to help people…OK? First off I’m not familiar with your term of your equipment being called a horizontal freezer. To my way of thinking a freezer FREEZES “stuff” and that is too cold to dry age meat. So rather than to address your other questions let’s start there. Now your turn! BTW I’m here in the USA and as I post it is 9:22 PM and I go to bed early like 10 PM so if you reply, please don’t think I’m avoiding you!
