Well the key is your nose so if it smells that bad it apparently has spoiled. A couple questions first – the beer refrigerator…is it a regular unit and not a small beer or wine cooler? Those small units chill but do not remove the moisture that dry aging is all about. Even just opening the door daily will not suffice! My second question is about the meat itself – could it have been bad to start with? – with just 3 weeks into the aging then I’m suspect of that issue. Ron
