Well – even after it has been dry aged it is still raw meat. I wouldn’t keep my cut steaks in my refrigerator much more than say 5 days. Personally After I have cut mine I seal them in Food Saver bags and freeze them. Taking that process a step further I will sometimes sous vide my individual sealed steaks so having them already tightly sealed is a plus! Ron
