Thanks for the heads up.
I put in the desiccant today (day 4) and will monitor it daily. If it seems to swell too much too quickly, or if the meat seems to lose too much mass, I’ll back off on it.
After more reading, I decided that since its an older fridge, and I don’t yet have a way to test the humidity (I will soon), that some desiccant can’t hurt.
In the mean time, I did find some paperwork on the fridge model that might have some info on if it has an auto defrost function or something else to manage humidity.
