Drying meat while on vacation

If your refrigerator is in proper working order you should have no concern that the door won’t be opened and closed. Dry aging is the removal of the tasteless water within the meat. I would NOT leave a container of water inside. Except for any dairy product or fresh fruit both which should be removed there should be no issue. Ron
