You might want to Google sous vide – but to just wet your appetite using a sous vide unit in a container of water heats your meat to an internal temperature that you wish. Then in this case your beef steaks can be removed from the protective FS bag and seared for the beauty that gives your steaks.
As for flash freezing – if you have the equipment then that’s fine, but placing the steaks (sealed in FS bags) into your freezer will freeze them in short order of 2 or 3 hours which is just fine!
