I see you plan to go 80 days with that rib eye so I have to ask…have you had meat aged that long before and liked it? My longest has been 60 days and the more I have tried back and forth I find my 45 day is better than my 60 day. BTW my 45 day lost 20.8% of it’s initial weight (moisture) and the 60 day was only slightly more at 21.1%. We’ll be interested in your 80 report!
