Welcome aboard! Before I answer your question I want to thank you for having read previous threads! There are so many responses which can answer many questions by newbies.

As for your plan and question then YES you will be fine! Most sub-primals are flash frozen before they leave the packing house headed for grocery stores and even “butcher houses!”
