One follow up question: Would it be bad for me to put it in a new bag for the final 2 weeks? I don’t mind using an extra bag, as this is my first go at this. I would much rather waste an extra bag than waste the striploin. The current Umai bag is bonded to most of the meat on the flat sides, and only “unbonded” on the 2 ends.
