I can tell you that from what I’ve read in this forum that 28 days seems to be the target date and less than that may not gain you as much in terms of flavor and aging. Also I have stuffed two 15 lb cuts in a bag and if they were any bigger I would have needed the next larger bag or would have cut off a couple of steaks. I used the standard primal bag. If you have your bags already measure what size will fit or if you need bags then tell Thea what size you will need for your ribeye. The bigger the primal the less trim waste you will have.
