Doing it at home so using normal fridge not a walk-in. The issue was definitely not the fridge, it was the hotel pan. I ordered new bags and they will be here in a day or two. I flipped it and removed the hotel pan so now it is just on a rack and is in the brand new bag. Maybe it will dry and start to form the normal color and texture?
Got some advice to let it sit till the additional bags arrive in 2 days, then trim off the parts that were brown and wet till I get to good meat, and reseal in the new bag. Then continue the aging process.
Thoughts?
