Welcome aboard! Did the COSTCO meat person wrap your meat for you so you weren’t walking around the store with it unprotected? The meat cabinet has to meet local sanitary conditions and temperature. So while cryovac is better and therefore desirable, that doesn’t rule out using the meat that wasn’t. Then as long as your refrigerator is a modern frost free unit operating properly your risk of contaminated meat is low. Enjoy your aging!
