Several answers will help me to help you. How long has it been aging?
Did you cut and then place each of the three pieces into 3 bags?
Was the meat purchased in a cryovac bag or out of a meat display case?
Does that green color have a sheen to it or dark dull green?
Are you using a modern frost free refrigerator that is maintaining a proper temperature we recommend?
